A Very Minor Collection of Recipes (by lil ol' me)


Steak

STEAK
Steak

Ingredients
Kosher salt
Saffron or peanut oil
Cast iron skillet

Recipe
Turn the heat up high on the skillet and preheat oven to 500F.
Salt each side of the meat, about 1tsp per side.
Put a little oil on each side of the meat.
Place into hot skillet.
Leave for 30seconds.
Flip.
Leave for 30 seconds.
Flip.
Place cast iron skillet into oven for 2minutes.  Flip and leave for 2 more minutes.
Let meat rest for 3minutes.
Enjoy!

Stuffed Tomatoes

Ingredients
Large Beefsteak Tomatoes
1c Leftover or cooked rice (white for more cohesive texture or brown for a little healthier version)
Salt & Pepper
2tbs Dill
1tsp Basil
.5lb chopped meat or cubed leftover steak or lamb

Recipe
Season cooked rice with dill, basil, salt, and pepper.  Taste.  Season to taste.
Cut the top off of each tomato.
Gut with spoon the inside of each tomato.  (You can save this to make into a red sauce.)
Brown chopped meat in pan and then drain the extra fat.  Season the chopped meat with salt and pepper.
Or if you’re using leftovers, chop the Leftover red meat.  Heat in pan, but don’t re-cook the meat because you don’t want it tough.
Add meat to rice.  Stir in.
Spoon in rice mixture into tomato.
Put the top onto tomato.
Place tomatoes into a roasting pan.  Add about ¼ inch of water to the pan.
Bake in a 350F oven for about 1/2hour.
Serve.

Fajitas

Ingredients
Leftover steak or chicken
Bell peppers (red or green)
Yellow onion
1tbs Olive oil
Flour tortillas
Sour cream
Cheese
Salsa
Guacamole

Recipe
Deseed peppers.  Slice length wise and then in half.
Slice yellow onion.
Add olive oil to pan.  Coat the bottom of the pan.  Bring to medium heat.  Sauté vegetables until onion is slightly translucent.
Place in bowl and cover with damp cloth.
In same pan bring heat in pan up to medium.
Add steak.  Heat, but don’t “cook. (About 2minutes per side)
Cover tortillas in dry cloth, microwave for 15seconds.
Slice steak.
Serve.

CHICKEN
Chicken & Rice

Ingredients
Leftover chicken
White rice (Leftover or cooked)
1.5c Milk
Parmesan

Recipe
Shred chicken.  Can use fork or hands.
In pot add cooked white rice.
Add milk.
Heat to 6/10.
Bring to boil.
Add chicken.
Season to taste.
Stir occasionally.
Cook for 15minutes or until rice is creamy.
Add parmesan.
Serve.

Cordon Bleu Wrap

Ingredients
Leftover chicken
Ham
Swiss cheese
Mushrooms
.5c White wine
Tortilla, spinach, or tomato wraps

Recipe
Heat sauté pan to medium heat
Sauté mushrooms
Add wine
Cook until there is no extra moisture in pan
Set aside
Chop ham (can use cold-cuts)
Shred chicken
Dice cheese
Heat pan to medium heat.  Add a little butter to pan and coat pan.
Add chicken and ham.  Cook for 3minutes.
Add cheese.  Cook 2minutes.
Take off heat. 
Add mushrooms into chicken mixture.  Stir.
Put into wrap and enjoy.

Chicken Noodle Soup

Ingredients
Left over chicken (can include bones)
1/2lb Pasta
3Cloves of Garlic
1Large Onion
Vegetables (your favorite)
1bullion cube
Italian seasoning (basil, thyme, oregano)
Salt & Pepper
Olive oil
Water
Parmesan

Recipe
Dice the onion
Mince the garlic cloves
Dice your favorite vegetables if they need to be diced
Coat the bottom of a large pot with olive oil
Bring to medium heat
Add the garlic and sweat it
Add the onions
When the onions are beginning to become translucent add your other vegetables
Sauté
Take off heat
Add the chicken
Put water into pot (probably about 1/2 gallon)
Bring pot to a boil
Season with salt, pepper, and Italian seasonings
Let boil for 10 minutes
Add bullion cube
Bring heat down to medium-low and cover the pot
Cook for 1hour
Re-season to taste
Add pasta
Cook 10minutes
Serve with parmesan on top

GROUND BEEF
Chili
Makes 4servings.

Ingredients
1whole yellow onion
2small (or 1large) jalapeño
1red pepper
1green pepper
1large tomato
2cloves garlic
2 cans of red beans
1lb ground beef
2tbs olive oil
Cumin
Chili powder
Red pepper flakes
Hot sauce (I like Tapatio)
Salt & pepper
1tbs Tomato paste or .5c tomato sauce
Sour cream
Shredded cheese

Recipe
Deseed all of your peppers
Dice pepper
Dice onion
Mince garlic
In large pot, bring heat up to medium.  Coat the pan with olive oil. 
Sauté peppers, garlic, and onion.  Stirring so not to brown them.
When onions are translucent add 1lb of ground beef.
Brown the beef.
(If feeling “healthy” brown the beef, drain most of the fat, and then sauté vegetables.)
Season with cumin, salt, pepper, chili powder, red pepper flakes, and hot sauce – season to taste and smell.
When brown, add both cans of red beans – including sauce from can.
Fill one can up with water, add to pot.
Turn the heat to high, boil.
Let boils on high for 10minutes then lower heat to medium. 
Dice tomatoes and add to pot.
Add tomato paste or sauce.  Stir.
Cook for 1hour.   After an hour lower heat and let simmer covered for 10minutes.  Taste, re-season if necessary.
Let rest overnight or at least 1hour before serving.
Serve with sour cream, hot sauce, and shredded cheese.

PORK
Sweet Mustard Pork Chops

Ingredients
1tbs Spicy mustard
1tbs Honey
Salt & Pepper
Pork Chops

Recipe
In a small ramekin or bowl add equal parts mustard and honey.  Mix with whisk or fork until smooth in color.
Lightly season pork chops with salt & pepper.
Glaze each side of chop with mustard mixture.
Bring a medium pan to medium heat.
Place each chop into pan.  Let cook on each side about 6minutes on each side.
Let rest for about 2minutes.
Serve.

VEGETARIAN
Black Bean Burgers

Ingredients
2cans black beans
1c Crushed croutons or bread crumbs
Vegetables of your choice (anything from corn to peppers or any combo)
1egg
Buns

Recipe
Open black beans and drain both cans.
Pour one can into a bowl.  Mash the beans with a fork.
Add other can of beans.  Mix.
Dice any vegetables that need to be diced (peppers, mushrooms, etc.).
Add bread crumbs or crushed croutons.
Add 1whole egg.
In pan, add a little oil to coat the bottom of the pan.  Bring to medium-high heat.
Mix with hand or wooden spoon.  Should be a bit sticky.
Make patties.
Place each patty into hot pan.  Sear.
Flip – this is difficult.  Treat it like an egg – be quick and rough.
Sear.
Serve on toasted buns with any condiments (I like hot sauce and mayo).

Fake French Onion Soup
Makes 2 servings

Ingredients
2Slices Bread
2Eggs
1tbs Milk
Salt & Pepper
4c Chicken Broth (about 2cans)
1large yellow onion
4slices of favorite cheese (I like jack)

Recipe
Make an egg wash.  Beat eggs with milk and season with salt & pepper.
Take bread.  Toast it.  Slice into cubes.
Soak toast-cubes in egg wash.
In a medium heat pan, cook the toast-cubes.  Stir so that the cubes cook evenly.
Slice the onion.  Add to pot.  Bring pot to medium heat.  Sauté onions.
When onions are slightly translucent, add chicken broth.
Bring to a boil.
Let boil for 10minutes.
Place toast-cubes into microwave save bowl. 
Pour onion soup into bowl.
Put two pieces of cheese over each bowl – should cover top of bowl.
Microwave for 15seconds or until cheese is melty.
Serve.

APPETIZERS
Hummus

Ingredients
1can chick peas
.5c olive oil
1small clove garlic
Splash of Lemon juice
Paprika
Salt & pepper

Recipe
Open can of chick peas.  Drain.
Add peas to blender with half of the olive oil and garlic.
Pulse and add oil as necessary.
Add a splash of lemon juice.
Pulse until smooth.
Serve with a little paprika on top.

Jalapeño Poppers

Ingredients
Jalapeños
Cream cheese
Bacon

Recipe
Cut the tops off of each jalapeño.  
Deseed, but keep the integrity of the jalapeno.
Rinse all of the seeds off and out.
Shake off excess water.
Use a teaspoon to stuff each jalapeno with cream cheese. 
Take a slice of bacon and wrap it around the jalapeño.  Repeat for each jalapeño.  
Place on cookie sheet.  In a 450F oven, place sheet in oven.  Cook for .5hour.
If bacon is not crispy, broil for 5minutes, but watch very carefully.  Alternatively, take out sheet and place jalapeños in a pan.  Heat the pan and crisp the bacon.
Serve.

Baked Brie

1brie round
Pastry dough
Honey
Walnuts
1Egg

Wrap the brie round in the pastry dough.  Lay dough flat and place round in center.  Fold the dough up onto round.  Turn over.
Make an egg wash.  Beat the egg with a little water. 
Lightly brush the egg wash onto the pastry dough.
Put onto cooking sheet.
Bake at 350F for .5hour.
Take out. 
Drizzle honey onto pastry and sprinkle walnuts on top.
Cut into brie and serve warm.

DESSERT
Rice pudding

Ingredients
1c Leftover or cooked white rice
.5c Raisins
1/3c White Sugar
1tbs Cinnamon
1c Milk
1tsp Vanilla extract
1egg
Pinch of salt

Recipe
In a saucepan add milk, sugar, and a pinch of salt.  Bring to medium heat.  Stir.
Add rice.  Stir.
Add raisins.  Stir.  Cook about 15minutes or until creamy and thick.
Beat egg.  Add egg into pot slowly and while stirring the rice mixture.  You don’t want to cook the egg.
Add cinnamon.  Stir.
Cook another minute to cook egg into pudding. 
Take pot off heat and add vanilla extract.  Stir in.
Serve hot.
